Spokane Earth Day 2010

Thanks to everyone who stopped by to see us at the Spokane Earth Day celebration last Saturday. We had a lot of fun, made some new friends and ate a veggie dog! By now most of us know that one of the best things we can do to make our planet happy and healthy for generations to come is to choose a vegan lifestyle. A vegan diet can lessen your carbon footprint, save countless animals and might even help you lose weight. So here’s a round-up of some great food, little bits of research and a challenge.

What could be more Earth-friendly than eating vegan right from your own backyard? Manifest Vegan has a recipe for dandelion fritters. Yes, dandelions!

The Vegetarian Times has a great article that breaks down exactly how destructive a meat-based diet is to the Earth written by a 12-year-old girl.

And remember, you’re not alone. Being vegan is a lot easier when you’re plugged-in to a supportive and welcoming community. The Spokane Vegans, that’s us, meet for monthly potlucks and our next one is this Saturday. We hope to see you there!
