Round-up: Mac & Cheese

 It’s been wet and cold here in Spokane and that kind of weather provides the perfect excuse for comfort food like mac & cheese. We’re talking true comfort food here though, because, of course, this round-up is all about vegan mac & cheese. And what’s more comforting than compassionate food choices? So here they are, all sorts of recipes to curb that mac & cheese craving.

*You may have heard that Daiya has finally found its way to the Inland Empire, well this fancy recipe uses the cheese that everyone is talking about these days.

*One of our favorite blogs, Vegan Yum Yum has a recipe with a healthy dose of veggies hidden in her cheeze sauce.

*Vegan Dad likes to use cashews, sunflower seeds and pine nuts as a base for his mac & cheese.
